I consider this one a huge win.
Not because it gives me a reason to use these adorable Mason Jars . And not even because it’s a make-ahead breakfast, which I am all about.
No.
It’s a win for me because my daughter LOVED it.
I wish I could say that she eats everything I cook. But this isn’t even close to the truth. Nothing makes me happier than when a reader tells me their son/daughter loved one of my meals. Because my 6 year old is just SO darn picky. She only has a handful of things that she likes, and while happily she does like some veggies, I am constantly worried about whether she is eating enough.
I also cannot relate at all. I have never been picky, obviously.
Anyway, my daughter does love fruit, she does love yogurt, and she will usually eat granola. In fact, I pack these items for her lunch quite often. But the reason this is such a major win is because, while she likes all these foods, having them touch, well that is a whole other story.
Yep. She is one of those.
So yogurt parfaits have been totally out of the question.
Until now.
One thing my daughter is not picky about is Ice Cream.
And she loves a good sundae. Especially a banana split.
She saw me gathering supplies for these Mason Jar Yogurt Cups and asked me if I was making banana splits.
No, silly.
Ummm…yes, Mia. That’s exactly what I am making.
And the rest is history.
Now she doesn’t usually fall for this kind of thing, but as we layered granola, bananas, yogurt and topped it with a few chocolate chips, some sprinkles and peanuts, the girl was in heaven.
She dug in, completely fine with the different food touching each other. And polished the whole thing off.
I mean, it’s a Banana Split, people? Who doesn’t love a Banana Split!
Her favorite thing now is to make her own! It’s so cute to watch her prepare her own breakfast.
When did she get so grown up?
Anyway – give these a try for yourself and for your kids! If you use jars, you can make them ahead of time and store them in the fridge for a few days. As long as you don’t mix, they won’t get soggy!
Breakfast Banana Split {Make ahead)
Ingredients
- RED: Your favorite plain yogurt you can add a touch of honey or stevia if you would like
- PURPLE: 1/2 banana sliced and any additional fruit or berries you want to add
- ORANGE: peanuts coconut
- TSP: cacao nibs I use chocolate chips for the kids, melted nut butter
- YELLOW: your favorite granola We make it ourselves or use Purely Elizabeth g/f
- Sprinkles for the kids, wink, wink
Instructions
- To assemble parfaits, set out glasses or mason jars and add in half of the granola. Top with half of the sliced bananas, and follow with half of the yogurt.
- Repeat layers again.
- Top with the goodies! We love adding a T of berries, a few peanuts, chocolate chips or cacao nibs, but get creative!
