I am not complaining, but it is a bit crazy, and we have had quite a few warm days recently…and as a stay at home mom of a hard to keep busy little boy, the warm weather is where’s it’s at.
But we will make the most of it with a week of snow storm style food – soups and other crock pot favorites. And lasagna…because is there a better snow day food?
I think not!
Snow Day Favorites Meal Plan & Grocery List
Monday: 21 Day Fix Pulled Pork with Maple BBQ Sauce {Crock Pot/Instant Pot} (Make this on Sunday and enjoy for two days!)
Grocery list:
For the pork:

- olive oil
- 3-4 pound pork shoulder or roast
- 2 cloves of garlic
- onion (optional)
- sea or Himalayan salt
- pepper
- garlic powder
- chicken or veggie stock
- tomato paste
- coconut aminos
- pure maple syrup
- apple cider vinegar
- garlic powder
- onion powder
Tuesday: 21 Day Fix Spinach and Sausage Lasagna Roll Ups
Groceries:
- whole wheat or gf lasagna noodles
- olive oil spray
- 1 pound ground sweet Italian chicken sausage (don’t like? Use lean ground beef or turkey)
- 10 oz frozen chopped spinach
- 8 oz part skim ricotta or cottage cheese (I used cottage cheese and it was GREAT!)
- 1/3 cup grated Parmesan cheese
- 1 egg
- salt and fresh pepper
- sprinkle of crushed red pepper (optional)
- homemade or no sugar added tomato sauce
- 1 cup mozzarella cheese, shredded
Wednesday: 21 Day Fix Sausage and Pepper Soup
Groceries:
- olive oil cooking spray
- 1 lb of spicy Italian turkey sausage (or sub sweet)
- 1 onion
- 2 bell peppers
- 2 cloves of garlic
- 1 (14oz) can of petite diced tomatoes
- 4 cups of low sodium organic chicken broth or stock
- fresh basil (you can sub dried)
- Parmesan cheese for topping, if desired
Thursday: 21 Day Fix Chicken and Veggie Stir Fry
Groceries:
- 4 cups of veggies of your choice
- 1 -2 lbs boneless chicken breast
- 3 cloves of garlic, chopped
- fresh lemon
- 3 tbsp Coconut Aminos
- 1/2 cup chicken broth
- 1 tsp coconut oil
- cooking spray
- optional – rice or quinoa
Friday: 3-Cheese White Pizza with Arugula {21 Day Fix} **For a meatless option, add shrimp instead of bacon! Or leave off entirely! It will still be yummy!
Groceries:
- whole grain wraps or pizza crust
- part skim ricotta
- shredded mozzarella and Parmesan cheese
- turkey bacon (or shrimp – or leave them both out)
- arugula
- sprinkle of garlic powder and crushed red pepper
- olive oil cooking spray
- olive oil
- Balsamic Vinegar or fresh lemon juice
