I’m back with a meal plan, y’all! But before I get to that, there is something I need to say…
For all of you who commented, emailed, reached out in some way or shared my post, Our Autism Story, last week I am so deeply grateful.
So thankful, even, that you took the time to just read it.
It goes beyond words.
I am still working my way through all of your comments and emails…each one is just so special to me, it’s taking some time. But I will get there.
In that post, I mentioned how I changed Max’s diet by removing dairy and gluten…which isn’t exactly the easiest thing to do at first, but for us, it’s been so worth it. This isn’t true for every child with Autism, but for Max, we saw significant gains in language, attention, and social awareness when we changed his diet. His GI symptoms (vomiting, reflux, stomach bloating) also cleared up.
It’s fascinating how much food affects our body and our mind.
So for this week’s Meal Plan, I am sharing some gluten and dairy free favorites of ours…it’s become a lot easier for me to cook this way and keep everyone (or mostly everyone) happy at meal time! Enjoy!
21 Day Fix Meal Plan & Grocery List {14} Gluten Free | Dairy Free Favorites
Monday: 21 Day Fix Easy Lemon Chicken serve with a side of roasted broccoli
21 Day Fix Containers- 1 RED, 1/4 YELLOW (I don’t count this), and 2 tsp per serving
Weight Watchers Freestyle- 5 points per serving
Groceries:
- 1 lb boneless chicken breasts
- vegan butter or ghee
- olive oil
- garlic powder
- salt and pepper
- rice flour (or regular flour if not gluten free)
- 5 lemons
- low sodium chicken broth
- fresh parsley (optional)
- broccoli or other side option
Tuesday: 21 Day Fix Grilled Pork Tacos with Avocado Peach Salsa
21 Day Fix Containers – For 2 tacos, it’s 1 RED, 1 YELLOW, 1/2 PURPLE, 1/2 GREEN, 1 BLUE
Weight Watchers Freestyle Points (for 2 tacos) – 8 points
Groceries:
- 1 lb boneless pork chops
- 1 T salt free taco seasoning
- olive oil spray
- salt and pepper
- corn tortillas
- shredded lettuce or cabbage
- 2 peaches
- 1-2 avocados
- 1 small red or orange bell pepper
- red onion
- minced jalapeno
- cilantro leaves
- 1 lime
- honey
- salt and pepper
- optional topping – Greek yogurt (easy to add for dairy lovers)
Wednesday: Sloppy Joe Stuffed Sweet Potatoes {21 Day Fix} (for non dairy free, top with cheese!)
21 Day Fix Containers – 1 YELLOW, 1 GREEN, 1 RED, (optional blue!)
Weight Watchers Freestyle Points (no cheese, using 93% lean ground turkey)- 7 points per serving
Groceries:
- 2 sweet potatoes
- 1 lb lean ground turkey or beef
- onion
- green pepper
- garlic
- chili powder
- cumin
- honey
- 14 oz can of diced tomatoes
- 6 oz can of tomato
Thursday: Chicken Pad Thai Zoodles {21 Day Fix} (Max eats this with rice)
(Serves 2)
21 Day Fix Containers- 1 RED, 1 1/4 GREEN, 1 ORANGE, 2 tsp
Weight Watchers Freestyle Points – 8 (without peanuts) 11 (with peanuts)
Groceries:
- 2 chicken breasts
- coconut oil
- 2 eggs
- 3 stalks green onion
- garlic
- ginger
- matchstick cut carrots
- 2 large zucchini
- Himalayan salt
- dash of crushed red pepper
- 1 lime
- honey
- coconut aminos (or gluten-free soy sauce)
- peanuts
- cilantro
Friday: 21 Day Fix Honey Glazed Salmon serve with a side of roasted green beans
makes 2-4 servings, 1 RED 1 tsp each
Weight Watchers Freestyle Points – 2 per serving
Groceries:
- 2-4 pieces of wild Alaskan salmon (I love Sockeye from Wegmans)
- 1 lime
- coconut oil
- coconut aminos (or gluten-free soy sauce)
- honey
- green beans or other side option

Hi NancyLynn, I am so grateful for you gor sharing your story. My daughter & I are in the middle of a Stony Brook University study on nutirtion and kids on spectrum. I will share anything we find out with you. Sometimes, I almost think about becoming a coach because I think this plan is perfect for special needs Moms like us. Not only would it have been impossible for me to have put my daughter in a gym daycare, but even leaving her with my husband at night & driving to a gym– I am exhausted! For me, getting it done Early nefore she wakes up is the only thing that works. I have so much more patience, energy & focus. Thanks so much for sharing all of your recipes with us! ??? Love, Adriana

Adriana…thank you for taking the time to write! I am very interested to hear about the study – and I hope it is beneficial for you guys! It’s funny that you say that about coaching…I have been thinking about hosting a free group for special needs moms with the 30 days free on demand. I couldn’t agree with you more – I would never be able to do a gym or put Max in the gym daycare. And my accountability group has been so supportive, especially this year when things have been a little tougher at times. Not sure where I would be without them! So I think you should become a coach…not everyone needs to be a 15 star diamond to make a difference…you just do what you can!!
