Healthy Meal Plan
On this week’s meal plan I’m looking for ways to make my (and your) life easier! We are going to use the Crock Pot, Air Fryer and Instant Pot to help everyone’s sanity getting dinner on the table quickly! We’re also using meals with shared ingredients to make accomplishing a grocery store trip that much faster!
If anyone in your house has been under the weather, my Gluten Free Chicken Noodle Soup recipe is the best medicine! With tons of ginger, garlic, lemon, and turmeric, it’s a great boost for the immune system! I think I might even double the batch to freeze for later!
For breakfast, I included an oldie but goodie – Low Carb Cauliflower Hash Browns paired with my Maple Chicken Breakfast Sausage recipe for something a little different! For lunch, You can’t go wrong with an easy Taco Salad! It’s great to slot into your Sunday meal prep and easily customized with your favorite toppings!

About This Meal Plan
If you have been following full plans, and are new to my weekly meal plans, each week there are five dinners and a breakfast planned out, along with a lunch suggestion.
These weekly plans allow for more flexibility, but the meal plan still follows the 21 Day Fix containers and also includes WW points. This plan is perfect for anyone who is interested in healthy eating, portion control, prioritizing whole foods, and living a healthy lifestyle.

This Week’s Plan
Groceries:
- 1 cup cauliflower rice I’ve used both fresh and frozen
- 1 egg
- 1/2 teaspoon everything but the bagel seasoning
- 1 teaspoon butter
Groceries:
- 1 lb ground chicken
- 1 ½ tsp poultry seasoning
- 1/2 tsp smoked paprika or sub regular paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 1/2 tsp dried rubbed sage
- 1/4 tsp cinnamon or nutmeg
- 3/4 tsp kosher salt divided use
- dash black pepper or up to ¼ tsp if you like pepper
- 2 ½ Tbsp maple syrup
- 1 tsp olive oil
- Olive oil or cooking oil spray
Groceries:
For the Taco Meat
- 1 pound lean ground beef can sub ground chicken or ground turkey
- 2 tbsp taco seasoning
- 1 cup canned tomato sauce
- ½ tsp salt
For the Salads
- 6 cup romaine lettuce washed and chopped
- ¼ cup fresh cilantro chopped, plus more for topping
- 1 cup grape tomatoes halved
- 1 bell pepper diced
- 1/4 cup red onion diced
- 1 cup canned black beans drained and rinsed
- 1/2 avocado diced
- ½ cup shredded pepper jack, cheddar, or Mexican blend cheese
- ½ cup fresh pico de gallo or your favorite salsa for topping
- 8 tbsp plain Greek yogurt or sour cream for topping
- 1 lime for topping
For the Crispy Tortillas
- 4 corn tortillas
- avocado oil Spray
- salt
Groceries:
- 2 teaspoons olive or avocado oil
- 1 small yellow onion or 1/2 of a large diced
- 2 cups diced carrots
- 1 cup diced celery
- 5 cloves garlic minced
- 2-3 tablespoons chopped fresh ginger I add even more bc I am obsessed !!
- 1 teaspoon turmeric powder
- 1 lb boneless chicken breast tenderloins chicken breasts, or chicken thighs
- 6 cups low sodium chicken broth
- Juice of 1/2 lemon optional – if you really like lemon flavor, you can add some lemon zest, too!
- Salt
- Black pepper
- Gluten-free egg noodles I use 4 “nests” of this brand or gluten free noodle shape of your choice
- Fresh herbs – parsley, thyme, oregano are my favorites
Groceries:
- 2 cups tomato sauce
- ¾ cups low sodium chicken broth
- 4 teaspoons chili powder
- 1 teaspoon cumin
- 1/4 tsp salt plus more for chicken
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon oregano
- 1.5 pounds chicken breast
- 2 cups diced green bell pepper
- ½ cup diced onion
- 6 thin corn tortillas I use Mission brand – 3 for 1 yellow
- 1 cup black beans
- â…” – 1 1/3 cups of freshly shredded cheddar cheese
Toppings
- plain Greek yogurt, cilantro, fresh pico de gallo, diced avocado
Groceries:
- 2 teaspoons avocado or coconut oil
- 2 tablespoons ginger
- 2-3 cloves garlic
- 1 tablespoon yellow curry powder or more to taste
- 1 cup brown rice
- 1 1/4 cup chicken broth or stock
- 2 cups frozen butternut squash
- 1 lb boneless chicken tenders or chicken thighs diced
- 1/3 cup Coconut milk
- Salt
- Garnish with green onion + cilantro if you have them I didn’t!
Groceries:
- 1 lb lean grass fed ground beef
- 1 small to medium head of cauliflower green leaves cut off, stem still intact.
- 4 teaspoons rice flour or flour of your choice – almond flour is best for keto
- 4 teaspoons butter vegan butter, or ghee
- 1 cup unsweetened original almond milk or milk of your choice
- 1 1/3 cups shredded cheddar cheese use Daiya or Violife for dairy free!
- Himalayan salt
Groceries:
- 2 wild caught salmon fillets or sustainably farmed salmon fillets fresh or frozen
- 1 lemon
- 2 tsp olive oil
- lemon pepper seasoning if yours doesn’t have salt, you will need to sprinkle salt on your salmon, too
- smoked paprika you can sub regular paprika
- lemon or lime wedges
Groceries:
- 3 cups gluten free rotini or penne pasta
- 2 cups low sodium chicken broth or water for stovetop, follow pasta package directions
- ½ teaspoon dry mustard
- ½ teaspoon garlic powder
- ½ -1 teaspoon salt
- 3 teaspoons butter
- 3 cups frozen butternut squash 1 10oz frozen bag
- 2 cups freshly shredded sharp cheddar cheese packed in tight
- 2 tablespoons Pecorino Romano or parmesan cheese
- 1/4 cup gluten free breadcrumbs (optional) you can make these easily by putting a slice of bread in your blender
