21 Day Fix Buffalo Chicken Pizza is a healthy version of the pizzeria favorite! Use precooked chicken to serve this up in no time! This post may contain affiliate links for products I’m obsessed with.
Confession #109 – I’ve been on a pizza kick.
It started a couple of weeks ago when my husband and I went to this Pizza Cafe in the Philadelphia neighborhood where we met and then lived for the first ten years of our life together.
So many memories from those years.
Our first date. Getting engaged. Buying our house. Having our daughter.
And Pizza.
Lots and lots of Pizza.
Our favorite Friday night take out was from The Couch Tomato Cafe , which opened right about the same time as my husband and I started dating. And I’m pretty sure it was there that I had my first slice of Buffalo Chicken Pizza.
Oh my heavens.
One bite and this New York pizza snob was smitten…and while my relationship with my husband was just beginning, so was my love affair with The Couch Tomato.
Anyway, since our recent stop there a few weeks ago, where we felt very old next to all the adorable twenty-somethings, I have made my own Fix approved Buffalo Chicken Pizza several times.
Is it the same?
Nope.
But it is pretty freaking delicious in it’s own right. So I thought it was about time I shared it here…in case you are all on a pizza kick, too.
I use whatever whole grain wraps, tortillas, or flatbread that I might have in the house for my 21 Day Fix Approved Pizzas and I just toast them in the oven a bit before adding the toppings. For this, I started with some blue cheese infused ricotta as the base.
Then I added some buttery chicken and hot sauce, more blue cheese, mozzarella, and some diced up red onions.
Bake until bubbly and then voila! Spicy, creamy, and oh-so-delicious pizza all for you. This smelled so amazing, I started munching even before I finished taking pictures.
Anyway, I plan to share more pizza recipes while I am currently obsessed, but check out my Taco Pizza and my Spinach and Artichoke Pizza in the meantime! Enjoy!

Buffalo Chicken Pizza
Ingredients
- Olive oil spray I used my evo
- 1 whole grain wrap tortilla, or flatbread
- 1 teaspoon butter can sub vegan butter or ghee
- 1/2 cup chicken breast diced and cooked
- 1/4-1/3 cup hot sauce more sauce, more spice!
- 2 tablespoons ricotta cheese
- 2 1/2 tablespoons blue cheese
- 3 tablespoons shredded mozzarella cheese
- 1 tablespoon diced red onion
- Garlic powder
- Parsley optional garnish
Instructions
- Spray wrap or flat bread with olive oil spray, then toast in a 375 degree oven until it begins to crisp. I usually place mine right on the oven rack. Remove from oven and turn oven up to 400 degrees.
- Mix 2 T of ricotta cheese with 1 T of blue cheese. Sprinkle with garlic powder and spread mixture onto pizza crust.
- Heat butter in a skillet over medium-low heat and add diced chicken and hot sauce. Cook for a few minutes to let the flavors combine, then spoon chicken and hot sauce onto the ricotta/blue cheese layer.
- Top with remaining blue cheese, mozzarella, diced red onion, and parsley. Bake pizza on a baking sheet or pizza stone for 4-5 minutes or until cheese is bubbly and brown.

So easy for a weeknight dinner! I’m doing Keto, so I use 8 Count low-carb tortillas from Aldi. I get a decadent, easy meal. Thank you, NancyLynn for all of your hard work in creating the meal plans and recipies!
Nancylynn says
Thank you, Laura!!
Danielle says
Delicious and super easy to make! I kept thinking there’s no way this is accepted on 21 day fix 😋
Danielle says
Completely! Thank you so much for responding!
It was so yummy. I’ll probably add some sort of version of this weekly!
Would you buy low-fat ricotta and low fat blue cheese dressing? And the Blue Cheese dressing would that count as a seed and dressing container?
Danielle says
Love your recipes. New to 21 Day Fix and super helpful to have the breakdowns!
Question though – It wouldn’t be 2 Reds – 1 for the chicken and 1 for Ricotta because there isn’t a full serving of each?
Nancylynn says
Thank you! This recipe is just 1 RED because the amount of chicken plus the amount of ricotta equals just 1 RED total. Does that make sense?
Dana says
These were so good! I mixed ranch dressing with the ricotta because I don’t like bleu cheese and it was fantastic. I also drizzled a little Buffalo sauce on the top when it came out of the oven. Definitely made the dinner rotation!
Nancylynn says
These are great ideas! Thank you!
Janna says
This recipe is so good!
I made ours with ricotta and feta instead of blue cheese because we aren’t fans.
Keli McHaney says
Hi! New to 21DF and curious how this recipe is 1 yellow container, yet you get a full flat bread for 1 container yet the food list states 1/2 a bagel or English muffin is 1 container. Just don’t want to start off miscalculating! This recipe looks amazing, can’t wait to try.
Nancylynn says
As long as your flat bread is around 100-120 calories, you can have the whole thing, but this is a great question!
Dori says
Could I substitute cottage cheese for the ricotta? And maybe a little mozzarella for the blue? Those are the ones I have on hand at the moment.
Nancylynn says
Yes! Go for it!
arlene says
how would you make this gluten free or use a cauliflower crust….wondering if it would work the same.
Nancylynn says
I like to make my pizzas on gluten-free tortillas now!
Sarah says
Wouldnt this be more than 1 blue?
Blue is 1/3 cup or 5.333 tablespoons and this recipe calls for 7.5 tablespoons of cheese total.
I’m confused. Please help!
Nancylynn says
Hi! Luckily ricotta is a red! So this is just about 1 blue!
Sarah says
Well apparently I have been counting Ricotta wrong all along. Thank you for the info! So excited to try this recipe tonight!
Patricia R says
I am a huge fan of this recipe… it has become my go-to choice for pizza, and my go-to choice for leftover chicken.
Thanks for introducing me to this combination of all my favorite flavours!
Nancylynn says
Thank you SO much Patricia! Means everything!
Lauren says
Just made tonight with gorgonzola instead of blue cheese. Superb, it satisfied my pizza and wing cravings at the same time!
PS – we have a couch tomato in West Chester and I have yet to visit – is the pizza that good – always looking for a good pizza that hit this NY Girls standards!
marie s says
is there an alternative for the blue cheese. my hubs and i have a hard time eating it
Nancylynn says
extra mozzarella, feta, or goat would work!!
Madeline says
Hi Nancy,
Is that supposed to be teaspoons of cheese? Because the capital T confuses it with Tablespoon.
Nancylynn says
It’s T for Tablespoon 🙂
Jamie says
Hi!! So excited to try this tonight!! Have you ever tried this with pre-cooked/pre-diced chicken from the store, like one of those little Tyson bags? Or do you always cook your own chicken that you had on hand? Also, your recipes are AMAZING!!!! Everything I have tried has been incredible. Your zuppa toscana soup has saved me so many calories and so much money for lunch this week 🙂
Nancylynn says
Awesome, Jamie – this makes me SO happy! And yes – that could totally work for this perfectly!!
Amber says
What kind of hot sauce do you usually use?
Nancylynn says
Franks!
Stefanie says
Made this tonight and be loved it! Every time I think I find a favorite, I find another one of your recipes that amazes the whole family! Thank you and I love the couch tomato too!
Nancylynn says
Are you near Philly, Stefanie?? And thank you for your sweet note – you have no idea how much that means to me!!
Nicole says
The Couch Tomato Cafe was one of my favorite spots when I lived in Manayunk. I must try this!
Nancylynn says
Omg – the best, right? I miss Philly food!
Debbie says
Sounds yummy!! Can’t wait to try!!! What size wrap do you use???
Nancylynn says
As large as I can find 🙂 There are so many good options now that are low in carbs and calories!
Courtney says
Is the container count for the entire pizza??
Nancylynn says
Yes – one pizza!
Kim Cantu says
I love all of your recipes but I do not follow the 21 day fix, is there a way for me to know the caloric totals?
Nancylynn says
Hi Kim!! That’s awesome – so happy the recipes are helping!! I have debated adding calorie info on my site, but worry because the plug-ins aren’t always reliable. But you can put this link into my fitness pal and they will calculate it for you…and I find them really reliable! Hope this helps!
