Guys.  Last week I was supposed to get my life back in order after weeks of people being sick over here.

Guess what?  We got hit with the stomach bug.  While my husband was away for work. And it snowed.  Twice.

And right now, I am just bracing myself for another possible snow day tomorrow.  And throwing out all hope for normalcy and routine.

It’s all good.  Especially when you have Lasagna Soup prepping for your Monday dinner.  Oh – and just in time for Fat Tuesday, my delicious Instant Pot Jambalaya!  SOOOOOOOO good you guys – and I realized this morning, it’s never been on a meal plan before!  That’s CRAZY.  If you try it, let me know what you think!

21 Day Fix Meal Plan & Grocery List {56} Fat Tuesday | Instant Pot | Weight Watchers

Monday: Healthy Instant Pot Lasagna Soup | 21 Day Fix Lasagna Soup [Gluten-free]

21 Day Fix Containers : 1/2 Yellow, 1 1/4 Green, 1 Red, 1/2 Blue, 1/2 tsp | Weight Watchers FS Points:  with part skim mozzarella, FF ricotta cheese – 9 points per serving.  Using 99% lean ground turkey – 6 points per serving.

Groceries: 

  •  olive oil
  • 1  1/4 lb Italian chicken sausage, ground turkey, or lean ground beef
  • 1 onion
  • 4 cloves of garlic
  • 4 cups chicken broth or stock
  • 1 (28 oz) can crushed tomatoes
  • 1 (14 oz) can of tomato sauce
  • fresh basil
  • fresh spinach,
  • 6 gluten free lasagna noodles
  • small container of ricotta
  • shredded mozzarella cheese
  • parmesan cheese (I use Pecorino Romano)

Tuesday:  Instant Pot Jambalaya (21 Day Fix)

21 Day Fix Containers: 1 Red, 1 Yellow, 1 Green, 1 tsp | Weight Watchers Freestyle Points: 9 per serving or 8 if using chicken breast instead of thighs

Groceries: 

  • sea or kosher salt
  • garlic powder
  • paprika
  • black pepper
  • onion powder
  • dried oregano
  • dried thyme
  • cayenne pepper
  • red pepper flakes (optional)
  • olive oil, divided
  • 1/2 lb chicken sausage
  • 1/2 lb medium sized shrimp
  • 1/2 lb boneless skinless chicken thighs
  • 1 1/2 cups brown rice
  • 1 1/2 cups organic chicken stock or broth
  • 1 (14.5oz) can of diced tomatoes
  • 1 onion
  • 3 cloves of garlic
  • 3 stalks of celery
  • 2 bell peppers

Wednesday:  Buffalo Chicken Chili (Stovetop) or Buffalo Chicken Chili (Instant Pot) 

21 Day Fix Containers: 1 RED, 1 GREEN per serving. Be sure to count 1/4 BLUE for the blue cheese topping  |  Weight Watcher Freestyle Points: 8 points per bowl WITH topping

Groceries: 

  • carrots
  • celery
  • 2 cloves of garlic
  • 1/4 of an onion
  • 1 – 1 1/2 pounds of lean ground chicken
  • 1 (28 oz)can of diced tomatoes
  • chili powder
  • hot sauce, or more to taste
  • 1/2 cup plain Greek yogurt
  • 1/3 cup of blue cheese crumbles
  • olive oil cooking spray
  • chives

Thursday: Instant Pot Beef and Broccoli (21 Day Fix)  (Crock pot – cook on low 6-8 hours, add steamed broccoli at the end)

21 Day Fix Containers: 1 RED, 1 GREEN, 1/2 tsp |  Weight Watchers Freestyle Points:  – 6 per serving

Groceries: 

  • 2 tsp olive oil
  • 1 1/2 pounds of flank steak, sliced very thin against the grain
  • 1 shallot
  • 2 cloves of garlic
  • fresh ginger
  • 2/3 cup beef stock (or sub water)
  • 1/3 cup of coconut aminos (or sub low sodium soy sauce)
  • honey
  • 3 1/2 cups of broccoli florets
  • arrowroot or your favorite thickener/flour (cornstarch also works well)
  • scallions
  • 1/4 tsp salt
  • crushed red pepper

Friday: Healthy Instant Pot Airfryer Chicken Taquitos (Slow Cooker | Oven Friendly | Gluten-free)

21 Day Fix Containers (for 2 Taquitos): 1 yellow, 3/4 Red, 1/2 green, 1/2 blue (toppings are additional) |  Weight Watchers FS Points (for 2 Taquitos):  5 FS Points (extra toppings are additional)

  • 1 lb chicken tenderloins
  • 1 jar of organic salsa
  • 1 lime
  • 1 cup of shredded sharp cheddar cheese or Mexican blend cheese of your choice
  • 12 Corn tortillas
  • olive oil or avocado oil cooking spray
  • salt
  • optional add in: 1 T salt free taco seasoning 
  • Optional toppings:
  • small container of greek yogurt
  • fresh pico de gallo
  • avocado or guacamole 
  • cilantro
