21 Day Fix Meal Plan & Grocery List {57} | Easy, One Skillet Meals | Weight Watchers Meal Plan

This 21 Day Fix Meal Plan is your answer to easy, one skillet meals for those busy nights!  Weight Watchers Freestyle Points included! This post contains affiliate links for products I’m obsessed with. 

This 21 Day Fix Meal Plan is your answer to easy, one skillet meals for those busy nights!  Weight Watchers Freestyle Points included!

Hey guys!  If you follow my blog, you know I LOVE one pot/pan/skillet cooking because while I love to cook, I hate to clean up!  It’s one of the reasons I love my Instant Pot so much.  But for these recipes, all you need is a skillet (click to see the one I use and love) and thirty minutes or less.

These are the recipes you can call upon for those busy nights, the nights you don’t plan ahead, or when you need to put together something quick and healthy so you don’t hit the drive thru line.

I also added my newest recipe – Chicken Ramen Stir Fry because, OMG, it’s amazing and you need to try it STAT.

Easy, One Skillet Meal Plan & Grocery List

Monday:  Healthy Chicken Ramen Noodle Stir Fry [Gluten-free | 21 Day Fix | Weight Watchers]

21 Day Fix:  1 Red, 1 Yellow, 1 Green, 1.3 teaspoons (per serving)  |  WW Freestyle:  7 points (per serving)

  • coconut aminos
  • honey or maple syrup
  • rice vinegar
  • toasted sesame oil
  • chili garlic paste or sub sriracha
  • 2 cloves garlic
  • fresh ginger
  • arrowroot powder or cornstarch
  • 2 brown rice ramen noodle cakes
  • olive oil or coconut oil
  • 1 1/2 cups of fresh broccoli florets
  • 2 cups of sliced bell peppers (I used 2 green peppers)
  • 1 yellow onion
  • 1 lb chicken tenderloins

 

Tuesday: Italian Chicken Skillet 

21 Day Fix: 1/4 GREEN 1 RED 3/4 BLUE (per serving)  |  WW Freestyle: 3 points (per serving)

Tip: sprinkle some more parm cheese on top for a perfect BLUE and serve with pasta or zoodles

Groceries: 

  •  olive oil
  • thinly sliced chicken breasts (1 lb)
  • garlic
  • 1 can crushed tomatoes
  • dried oregano
  • dried basil
  • crushed red pepper flakes
  • shredded mozzarella cheese
  • Parmesan cheese

Wednesday: Cheesy Zucchini Mexican Skillet {21 Day Fix}

21 Day Fix: 1 GREEN, 1 RED, BLUE to taste- I used 1/2 (per serving)  |  WW Freestyle: 5 points (per serving, using low fat cheese)

Groceries: 

  • olive oil cooking spray
  •  extra lean, grass-fed ground sirloin
  • onion
  • bell pepper
  • zucchini
  • chili powder
  • 1 can of diced tomatoes
  • shredded cheddar cheese

Thursday:  21 Day Fix Sausage, Bean, and Kale Skillet

21 Day Fix:  1 GREEN, 1 RED, 1/2 YELLOW, 1/2 BLUE (per serving)  |   WW Freestyle:  4 points (per serving)

Groceries: 

  • olive oil cooking spray
  • 1 package Italian chicken sausage
  • kale
  • chickpeas
  • crushed tomatoes
  • Italian seasoning
  • shredded mozzarella

Friday:  Shrimp with Zoodles {21 Day Fix}

21 Day Fix: 1 1/2 GREEN, 1 RED (per serving) |  WW Freestyle:  ZERO!!!! (per serving)

Note: These measurements do not include cheese.  If you do use cheese, be sure to account for it!

Groceries: 

  • 1 lb of shrimp
  •  zucchini
  •  garlic
  • cherry tomatoes
  • chicken broth
  • lemon
  • crushed red pepper
  • Parmesan cheese (optional)
