How was your summer? Did you blink and it was over? That’s kinda the deal here.
But in somewhere in that blink, did you enjoy lots of ice cream, cocktails, and burgers?
Or was that just me?
At least I know now going into the summer that it’s going to be tricky to stay on an eating plan. And I don’t obsess about this. I tried my best to compensate with 8 weeks of Insanity Max 30, but you can’t out exercise all the food, amirite?
So it’s September and before my life becomes ruled by all things pumpkin, I’m getting back to meal planning for me and for you, too!
This week’s 21 Day Fix Meal Plan has 5 dinners that you can make in your Instant Pot , plus some breakfast and lunch recipes that could work container wise for the week! Instant Pot Friendly Meal Plan & Grocery List
Monday (Labor Day): 21 Day Fix Pulled Pork with Maple BBQ Sauce {Crock Pot/Instant Pot} (Crock Pot directions included! Use leftover meat for lunches!)
Grocery List:
- olive oil
- 3-4 pound pork shoulder or roast, fat trimmed
- garlic, minced
- onion (optional)
- garlic powder
- onion powder
- chicken or veggie stock
- tomato paste
- coconut aminos (sub low sodium soy sauce)
- pure maple syrup (sub honey)
- apple cider vinegar
Tuesday: 21 Day Fix Instant Pot Flank Steak Tacos (If you don’t have an IP, omit the diced tomatoes and grill your steak!)
- 1 -1 1/2lb flank steak
- 2 limes
- olive oil
- garlic
- 1 tablespoon of salt-free taco seasoning
- 1 can of diced tomatoes with green chilies
- cilantro
- coleslaw mix (or chop your own cabbage)
- red onion
- jalapeno
- maple syrup or honey
- chili powder (optional)
- corn tortillas, warmed
- toppings: avocado, cilantro, plain Greek yogurt
Wednesday: 21 Day Fix Instant Pot Asian Chicken (Click here for a crock pot version!)
- 1-2 lbs of chicken thighs (1lb for 4 servings)
- honey or maple syrup
- coconut aminos (or sub low-sodium soy sauce)
- tomato paste
- coconut oil
- a dash of crushed red pepper
- 2 tsp rice flour (optional)
- sides: green beans, rice, quinoa, cauliflower rice
Thursday: Instant Pot Balsamic Chicken {21 Day Fix} (Or – 21 Day Fix Slow Cooker Balsamic Chicken with Zoodles)
- 1-2lbs boneless, skinless chicken breast
- 1 28oz can of diced or crushed tomatoes (I love it with either, although diced might work a little better in the IP!)
- red onion
- garlic
- 1/2 cup balsamic vinegar
- basil, oregano, and garlic powder
- serve with zoodles or noodles
Friday: 21 Day Fix Instant Pot Buffalo Chicken Chili (Stovetop version here – Buffalo Chicken Chili)
- carrots
- celery
- garlic
- onion
- lean ground chicken
- 1 28 oz can of diced tomatoes
- chili powder
- hot sauce
- plain Greek yogurt
- blue cheese crumbles
- cooking spray
- chives
