Healthy Meal Plan
Summer just started and we’re working on possibly finding our summer routine next week! For now, we’re just taking a big exhale and leaning into having nowhere to be for a couple days! This means lots of time at the pool and figuring out how to avoid eating every meal at the snack stand.
So, this week I’m making a big batch of Make Ahead Freezer Waffles to streamline our mornings! Also these are way less expensive than the GF ones from the box and aren’t we all looking for ways to cut grocery bills these days?
For lunch, a little prep will go a long way to make your week easier with grab-and-go Mason Jar Salad Recipes with Homemade Ranch. This ranch is so delicious – I’m already drooling thinking about it! I’m also going to utilize some leftovers too!
Finally, easy and crowd pleasing dinners like Healthy Instant Pot Airfryer Chicken Taquitos and the fake-out-take-out IP Chicken and Broccoli are going to make this week a win! A lot of these dinner recipes are reader favorites that have been around for a while and we keep going back to them because they are just so yummy!

About This Meal Plan
If you have been following full plans, and are new to my weekly meal plans, each week there are five dinners and a breakfast planned out, along with a lunch suggestion.
These weekly plans allow for more flexibility, but the meal plan still follows the 21 Day Fix containers and also includes WW points. This plan is perfect for anyone who is interested in healthy eating, portion control, prioritizing whole foods, and living a healthy lifestyle.

It’s still important to follow the 21 Day Fix plan on Saturdays and Sundays for optimal results, but you will likely have leftover meals and ingredients after following this healthy weekly meal plan. This Week’s Plan
Groceries:
- 4 cups Bob's Red Mill Gluten Free Rolled Oats
- 4 teaspoons baking powder
- 6 tablespoons arrowroot flour
- 4 tablespoons raw sugar
- 1/4 teaspoon salt
- 3 eggs
- 2 cups vanilla almond milk
- 1 1/2 teaspoons vanilla
- 4 tablespoons butter, vegan butter, or coconut oil melted; (we love it with vegan butter best)
- Coconut or avocado oil cooking spray
Groceries:
- 1 lb ground chicken
- 1 ½ tsp poultry seasoning
- 1/2 tsp smoked paprika or sub regular paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 1/2 tsp dried rubbed sage
- 1/4 tsp cinnamon or nutmeg
- 3/4 tsp kosher salt divided use
- dash black pepper or up to ¼ tsp if you like pepper
- 2 ½ Tbsp maple syrup
- 1 tsp olive oil
- Olive oil or cooking oil spray
Groceries:
For the Salads:
- 4 cups Mixed greens – kale, spinach, and romaine are my favs
- ½ lb chicken cooked and diced (I grill them or bake for 30 minutes on 350)
- 1 small head broccoli chopped
- 1 pint cherry tomatoes halved
- 8 slices Nitrate free turkey bacon cooked and diced
- 2/3 cup Matchstick carrots
- 1/3 cup cubed cheddar cheese optional! I make this all the time with no cheese!
For the Ranch Dressing:Â
- 1/2 cup plain Greek Yogurt 2% for the Fix and 0% for WW
- 1 tablespoon apple cider vinegar
- 1/2 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried dill or 1 teaspoon fresh
- 1 teaspoon fresh chives
- Freshly ground black pepper
Groceries:
- 4 large green bell peppers tops, ribs and seeds removed
- 1 lb extra lean grass fed ground beef
- 2 cups homemade or no sugar added tomato sauce we love Rao's
- 2 cloves garlic minced
- 1/2 onion chopped
- 2 cups shredded zucchini or zoodles
- 1 1/3 cups shredded Italian cheese blend
- Fresh basil
- Salt and pepper to taste
Groceries:
- 1 lb chicken tenderloins
- 1 jar organic salsa
- 1 lime
- 1 cup shredded sharp cheddar cheese or Mexican blend cheese of your choice
- 12 corn tortillas or sub gluten-free or whole wheat flour tortillas
- Olive oil or avocado oil cooking spray
- Salt
- 1 tablespoon salt free taco seasoning optional
Optional toppings:
- Small container of greek yogurt
- Fresh pico de gallo
- Avocado or guacamole

- 2 cups cauliflower rice thawed if frozen (although I have done it from frozen in a pinch!)
- 2 cups broccoli florets
- 1 lb chicken tenderloins cut into bite sized pieces
- 4 teaspoons rice flour or gf flour blend
- 4 teaspoons vegan butter, butter, or ghee
- 1 cup unsweetened original almond milk
- 1 1/3 cups shredded cheddar cheese use Daiya for dairy free!
- Himalayan salt

- 2 teaspoons coconut oil can sub olive or sesame oil
- 1 lb boneless chicken tenderloins cut into bite sized pieces
- 1/2 cup diced shallots about one whole shallot
- 2 cloves garlic minced
- 1 teaspoon freshly grated ginger
- 2/3 cup low sodium chicken stock or sub water
- 1/3 cup coconut aminos or sub low sodium soy sauce
- 2 tablespoons + 1 teaspoon honey
- 3 1/2 cups broccoli florets
- 1/2 tablespoons arrowroot or your favorite thickener/flour cornstarch also works well
- Scallions
- 1/4 teaspoon salt
- Crushed red pepper
