After being a single mom last weekend, I am enjoying the chaotic calm (is this a thing?) of a two parent house today…and so, a new meal plan for the week is here!
This week showcases several of favorite Make Ahead Recipes…these are great to prep ahead of time if you have a meal prep day, or even prep one while cooking another at dinner time. These recipes also freeze great, with the exception of the mini Zucchini Pizzas, but I love to make a big batch of my Homemade Tomato Sauce to freeze and use for recipes like this! I threw this Low Carb Pizza option in there because a lot of you are doing meatless Fridays right now and this is one of our favorite meatless dinners! Seriously one of my husband’s favorite meals.

21 Day Fix Meal Plan & Grocery List {8} Make Ahead Meal Prep Dinners
Monday: Easy 21 Day Fix Chicken Veggie Soup {Stovetop, Instant Pot, Slow Cooker}
21 Day Fix Container Count: 1 Red, 2 Green (be sure to measure your cheese if you use it)
Weight Watchers Freestyle Points: 0 (be sure to count cheese if you use it. 1 tsp – 0 points, 2 tsp – 2 points)
Tip: While making this one, also prep your Shepherds Pie for tomorrow!
Groceries:
- carrots
- celery
- onion
- garlic
- zucchini
- fresh string beans
- spinach
- 32 oz of organic, low sodium vegetable or chicken stock
- 1 can of diced tomatoes
- 1 lb chicken breasts
- Parmesan cheese
- Olive oil cooking spray
Tuesday: Healthy Shepherds Pie {21 Day Fix} or Healthy Instant Pot Shepherds Pie [21 Day Fix| Gluten and Dairy Free]
21 Day Fix Container Counts: 1 YELLOW, 1 GREEN, 1 RED and 1 1/2 tsp
Weight Watchers Freestyle Points – 4 per serving
Tip: Since you already prepped your Shepherds Pie, throw your chicken in the marinade for tomorrow night.

- chicken broth
- tomato paste
- 1 lb organic lean ground turkey
- cauliflower
- red potatoes
- vegan butter, olive oil, or ghee
Wednesday: Baked Lemon Garlic Chicken {21 Day Fix} with 21 Day Fix Three Cheese Zucchini Bake (assemble this ahead of time and just bake when you are ready!)
21 Day Fix Containers: 1 RED, 2 tsp (for chicken)
Weight Watchers Freestyle Points: 3 per serving (for chicken)
Tip: Assemble your Meatloaf for tomorrow while your chicken is baking.

- 1 1/4 lb boneless, skinless chicken thighs

- fresh thyme (or dried)
- 2 maple syrup (or honey)
- red chili flakes
- olive oil spray
- zucchini
- fresh or dried basil
- Italian seasoning

- shredded mozzarella cheese
- shredded Parmesan or Romano cheese

- crushed red pepper (optional)
Thursday: Momma’s Meatloaf {21 Day Fix) or Healthy Instant Pot Meatloaf and Mashed Potatoes [21 Day Fix | Weight Watchers]
21 Day Fix Containers: 1 Red, 1 Yellow, 1 Green, 1/4 Blue, 2 tsp
Weight Watcher Freestyle Points – 11 per serving for the entire meal
Groceries:
- 2lbs of lean, grass fed ground beef
- seasoned breadcrumbs (we use gluten free)
- onion
- garlic
- 2 eggs
- shredded pecorino romano
- dry or fresh parsley
- tomato sauce
- potatoes
- carrots
Friday: Mini Zucchini Pizzas {21 Day Fix}(we love to serve this with a salad)
21 Day Fix Containers: serves 1 = 1 GREEN, 1/2 BLUE
Weight Watchers Freestyle Points: 3 per serving (you can lower points further with a lower fat cheese)
Tip: Prep this sauce ahead of time and freeze to use in recipes like this!
