Confession: I LOVE teachers! To show my gratitude I volunteer to coordinate the Teacher Appreciation events at my kids’ schools. Aka the reason I’ve been MIA on socials and the blog this week – I’ve been in prep mode! I can’t wait to see it all come together next week! And a HUGE thank you to all of you teachers and staff out there for your patience and selflessness to teach and care for our kids every day!
Now, onto the meal plan. Since I’m going to be spending a lot of brain power on TA week, I need a super simple meal plan. Like crazy simple. Think dump and go recipes and 20 minute one skillet dinners. This is my gift to myself AND YOU. Because ain’t nobody got time for complicated meal plans in May.
This weekly meal plan is based off of Full Meal Plan Vol. 5, so if you want to have all of your meals planned out for you, feel free to follow that full plan instead!
If celebrating Cinco de Mayo is your vibe, feel free to swap around days on this plan and use the Salsa Lime Chicken Bowls or Easy Salsa Verde Pork (yummy in tacos too) meal on Monday instead!

About This Meal Plan
If you have been following full plans, and are new to my weekly meal plans, each week there are five dinners and a breakfast planned out, along with a lunch suggestion.
These weekly plans allow for more flexibility, but the meal plan still follows the 21 Day Fix containers and also includes WW points. This plan is perfect for anyone who is interested in healthy eating, portion control, prioritizing whole foods, and living a healthy lifestyle.

I love Chicken Vegetable Soup any time of year and it’s the perfect way to get a ton of veggies in early in the day! I’m also going to plan in some leftovers!

When I meal plan I always start by planning my dinners. Then breakfast, then lunch. And finally, I fill in my snacks for the day with my remaining macros, points, or containers.

It’s still important to follow the 21 Day Fix plan on Saturdays and Sundays for optimal results, but you will likely have leftover meals and ingredients after following this healthy weekly meal plan. And, so, to eliminate food waste, take inventory of your fridge and pantry at the end of the week and create a plan for the weekend. This Week’s Plan
Groceries:
- 1 small carrot shredded
- ¾ cup Plain Greek Yogurt
- ¾ cup Cottage Cheese
- 1/2 teaspoon Vanilla Extract
- 1 Scoop of Vanilla Protein Powder Snickerdoodle Protein Powder, or Unflavored Protein Powder
- 1 tablespoon raw sugar
- 1/2 teaspoon cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
Toppings:
- 1 tablespoon GF Graham Cracker Crumbs
- 2 teaspoon chopped pecans
- 2 tablespoon Diced frozen pineapple tidbits
- 2 teaspoon Raisins
Groceries:
- 1 cup diced carrots
- 1 cup chopped celery
- 1/2 diced onion
- 2 cloves garlic minced
- 1 zucchini cut in half moons
- 1 1/2 cups fresh string beans cut into bite size pieces
- 1 1/2 cups spinach
- 32 oz organic low sodium vegetable or chicken stock
- 28 oz diced tomatoes (I have also used 14 oz cans or fresh tomatoes too!)
- 1 cup water
- 1 lb boneless skinless chicken breasts
- Himalayan salt
- 2/3 cup Parmesan cheese
- Olive oil cooking spray
Groceries:
- 1 medium to large spaghetti squash washed
- 2 teaspoon olive oil I used my Tuscan Herb EVOO from The Bodacious Olive
- 5 cloves garlic crushed
- 1.5 lb organic ground turkey ground chicken, or ground beef
- 56 oz crushed tomatoes 2 large cans
- 2 teaspoon Italian Seasoning
- Crushed red pepper to taste
- Salt to taste
- Pepper to taste
- 2/3 cup Parmesan cheese optional
Groceries:
- 1-2 lbs boneless skinless chicken breast
- 1 jar organic all natural salsa with no added sugar
- 1 lime
Groceries:
- Olive oil cooking spray
- 1 package Italian chicken or turkey sausage or make your own
- 3 cups kale
- 1 cup chickpeas
- 1 1/2 cups crushed tomatoes
- 1 teaspoon Italian seasoning
- 2/3 cup shredded mozzarella
Groceries:
- 1-1.5 lb pork tenderloin (should be enough for 4 servings)
- 1 jar salsa verde look for one without preservatives or added sugar
Optional Toppings
- fresh lime, fresh salsa, avocado, cheese, cilantro, rice, cauliflower rice. Anything goes!

- 4 cups veggies of your choice broccoli, matchstick carrots, and bell peppers are faves
