I feel like I have been MIA lately. I am sorry. Have you missed me?
More importantly, what have you been eating??
For some reason, I have been crazy busy over the last couple of weeks…which is ironic considering I resigned from my job.
Yes.
You read that right. I resigned from my teaching position of 14 years.
But that is a story for another post.
And I still have my two little bosses here at home, hence the lack of posting lately.
They own me, and they know it.
But I have big plans for this blog in the new year. Lots of new recipes, and I also plan to revamp my archived posts to make the recipes more user (and print) friendly. Hope you’ll stick with me!
And, even sooner, I am launching my own Etsy Shop! Eeek! This is a joint project with my designer, Kelley Joss…and I cannot wait. My dream is to have every one of you planning and prepping healthy meals with ease.
As 2015 comes to a close, I am so thankful for this blog and all of my wonderful readers. You have no idea how much this website means to me…and all of your support means even more.

Taco Pizza – This cracks me up! It’s the number one most popular recipe on my blog…and it’s something I have been making since I was a teenager! It’s super simple and yummy, though – so I can see why it gets a lot of attention!
Quick Turkey Taco Skillet – This was one of my first recipes back when I used to share only on my facebook page. I am dying to rework this post and the pic…it isn’t even in a true recipe format!
Zucchini Pizzas – My veggie hating husband declared this his favorite dinner. If you haven’t tried them, get to it!
Spaghetti Squash Lasagna – A definite reader favorite – and a favorite of mine, as well! I remember how excited I was to share this one with y’all.
Italian Pork Chops – These are SO delicious and SO easy. Note to self – I need to make them more often.
Sausage and Cauliflower Casserole – I was so proud of this one…and still am. Nothing like creating a new dish from what you have in the fridge and having everyone love it.
Baked Oatmeal Cups– We make these almost weekly! Such a yummy way to start the day!
Crock Pot Chicken Tortilla Soup – Love this one – throw everything in and turn on. Why isn’t everything in life so easy?
Sloppy Joe Sweet Potatoes– YES! YES! YES! I could eat these every single day.
Easy, Caprese Chicken – Such a great option for a weeknight dinner or a weekend with company. Pretty and delicious.
