Confession: These meal plans can get complicated.
No, the actual plan isn’t that complex or involved. But making sure there aren’t crazy, random ingredients leftover sitting in the fridge, not being used. And not to mention, ensuring there is variety and that you guys aren’t getting bored!
One way to keep it new and exciting is to include my newest recipe! Did you catch the Bacon Wrapped Chicken Tenders? They are so yummy (and crowd pleasing!) that I had to get them on a meal plan ASAP.

So this week I am featuring some of my favorite low carb meals. Some of you are following low carb diets, others avoid carbs after a certain time of day, and some of you like to save your carbs for other things. (I’m looking at you, yellow treat swaps!) Whatever the reason, enjoy these low carb dinners this week!

Low Carb Dinner Meal Plan & Grocery List
Monday: Cauliflower Cheeseburger Mac or Instant Pot Cauliflower Cheeseburger “Mac” | Instant Pot Low Carb Hamburger Helper [21DF | WW]
21 Day Fix: 1 RED, 1 GREEN, 1 BLUE, 1 tsp (per serving) | WW Freestyle: 8 points (per serving)
Groceries:
- grass fed ground beef
- cauliflower
- rice flour (or flour of your choice)
- vegan butter, regular butter, or ghee
- unsweetened original almond milk
- shredded cheddar cheese (use Daiya for dairy free!)
Tuesday: Bacon Wrapped Chicken Tenders with Roasted Corn and Black Bean Salad {21 Day Fix} [For low carb, serve with grilled or steamed veggies or a side salad!]
Chicken 21 Day Fix: 1 1/2 RED, 3/4 BLUE (per serving) | WW Freestyle: 5 points (per serving)
Salad 21 Day Fix: 1/2 YELLOW, 1/2 GREEN (per serving) | WW Freestyle: ZERO points (per serving)
Groceries:
Chicken
- chicken tenderloins
- nitrate free turkey bacon (for keto, use a no sugar pork bacon)
- pepper jack, sharp cheddar, or cheese of your choice
- avocado
- olive oil spray
- garlic powder
- Himalayan salt (optional)
Salad
- black beans
- roasted corn
- cherry tomatoes
- bell peppers
- red onion
- cilantro
- lime
- honey (optional)
Wednesday: 21 Day Fix Lazy Zucchini Enchilada Skillet
21 Day Fix: 1 1/4 RED, 1 BLUE, 1 GREEN, 1/2 TSP (per serving) | WW Freestyle: 7- turkey or chicken or 9- beef points (per serving)
Groceries:
- tomato sauce
- dried oregano
- ground cumin
- garlic powder
- onion powder
- chili powder
- olive oil
- lean ground turkey, chicken, or beef
- red onion
- zucchini
- garlic
- cottage cheese
- plain Greek yogurt
- shredded sharp cheddar cheese
- salt and pepper
- cilantro
Thursday: Instant Pot Chicken and Broccoli (21 Day Fix)
21 Day Fix: 1 RED, 1 GREEN, 1/2 tsp (per serving) | WW Freestyle: 5 points (per serving)
Tip: If not low carb, serve over Freezer Friendly Instant Pot Brown Rice – otherwise it’s great all by itself!

- coconut oil (can sub olive or sesame oil)
- boneless chicken tenderloins
- diced shallots
- garlic
- grated ginger
- low sodium chicken stock (or sub water)
- coconut aminos (or sub low sodium soy sauce)
- honey
- broccoli florets
- arrowroot or sub your favorite thickener/flour
- scallions

- crushed red pepper
Friday: Shrimp with Zoodles {21 Day Fix}
