Remember when I told you it was my birthday this week? Well, I can’t believe it. I actually took a day “off” (quotes, because, well, it’s never totally off with kids, and when you work for yourself!) and had a self-care day on my birthday.
You guys, whoa! I. Needed. That.
I’ve been hanging on to a sinus infection for a couple weeks now, so a slower day was just perfect. Too bad it didn’t cure me, and I ended up at Urgent Care last night anyway. But with meds in hand, I am forging ahead with sharing a whole new meal plan with you!
Remember last week I said these upcoming meal plans are all about “auditioning” some recipes for your future Holiday menus. Last week we tried 21 Day Fix Crispy Shaved Brussels Sprouts and Healthy Sweet Potato Casserole.
This week we are giving three Holiday recipes a try: Instant Pot Stuffing with Brown Rice and Sausage (21 Day Fix), 21 Day Fix Butternut Squash Soup {Instant Pot/Crock Pot/Stove Top}, and Maple Cider Holiday Salad [21 Day Fix | 2B Mindset]. I am so excited for soup and salad night!

This week’s 21 Day Fix meal plan-
Monday: Instant Pot Chicken Marsala [Stove-Top Option]
21 Day Fix: 1 RED, 1/2 GREEN, 1 tsp (per serving) | WW Freestyle: 6 (chicken thighs) or 4 (chicken breasts) points (per serving) | [Recipe makes 4 servings]
Tip: Serve with green beans or a side salad and your favorite pasta!
Groceries:
- 1–2 pounds of chicken thighs (or boneless tenderloins if you prefer)
- 4 tsp butter or ghee
- olive oil spray
- 2 cups sliced mushrooms
- 3 T diced shallots
- 3 cloves of garlic minced
- salt
- pepper
- garlic powder
- 3/4 cup of Marsala wine
- 1/2 cup chicken stock
- tapioca starch, corn starch, or rice flour (can sub whatever flour/thickener you have on hand)
Tuesday: Quick Turkey Taco Skillet {21 Day Fix}
21 Day Fix: 1 RED 1/2 GREEN 1 YELLOW 1/2 BLUE (optional) (per serving) | WW Freestyle: ZERO points (if using 99% ground turkey); 4 points (if using 93% ground turkey) | [Recipe makes 4 servings]
Groceries:
- 1 onion
- 1 green bell pepper
- 1 pound ground turkey
- 14 oz canned petite diced tomatoes, with jalapenos
- 1 cup black beans
- 1 cup frozen corn
- chili powder
- cumin
- garlic powder
- Optional toppings: sour cream, avocado, shredded cheese
Wednesday: Instant Pot Stuffing with Brown Rice and Sausage (21 Day Fix)
21 Day Fix: 2 YELLOW, 1 RED, 1 GREEN (per serving) | WW Freestyle: 10 points (per serving) | [Recipe makes 6 dinner size servings]
Groceries:
- 2 cups brown rice
- 2 cups organic chicken stock or broth
- 1 lb raw sweet Italian chicken or turkey sausage
- olive oil
- 1 head of celery
- 1 large onion
- 1 container sliced fresh mushrooms (I used baby bellas)
- salt and fresh cracked pepper to taste
Thursday: 21 Day Fix Butternut Squash Soup {Instant Pot/Crock Pot/Stove Top} and Maple Cider Holiday Salad [21 Day Fix | 2B Mindset]
Soup- 21 Day Fix: ½ RED, 1 GREEN, ¼ BLUE, 1 TSP (per serving) | WW Freestyle: 4 points (per serving) | [Recipe makes 4 servings]
Salad- 21 Day Fix: 1 GREEN, 1 ORANGE (per serving) | WW Freestyle: Salad base- ZERO points; Dressing- 6 points (per serving) | [Recipe makes 8 servings]
Groceries:
Soup
- olive oil cooking spray
- 8 slices of turkey bacon
- 2 shallots
- 3 cloves of garlic
- 3–4 cups of chicken or veggie stock
- 4 cups of butternut squash puree (about 1 squash)
- olive oil
- salt
- pepper
- 1/3 cup of full fat coconut milk (I love So Delicious Culinary Coconut Milk)
- fresh herbs of your choice – chives or parsley are good options
Salad
- 1 bag of Sweet Kale Vegetable Salad Kit from Costco
-or – - 8 oz Brussels sprouts
- 2 cups finely chopped kale
- 1 cup of broccoli slaw
- 2 cups thinly sliced cabbage (I buy a small bag of pre sliced red cabbage)
Dressing
- extra virgin olive oil
- maple syrup
- apple cider vinegar
- Dijon mustard
- salt and pepper
- (optional – orange zest)
(Optional) Salad Toppings
- dried cranberries
- chopped nuts or seeds
- fruit (apples, clementines, pears, berries)
- goat cheese or feta cheese
Friday: 21 Day Fix Instant Pot Asian Chicken or 21 Day Fix Asian Style Crock Pot Chicken
21 Day Fix: 1 RED, 1 TSP (per serving) | WW Freestyle: 9 points (chicken thighs) or 5 points (chicken breast) (per serving) | [Recipe makes 4 servings]
Tip: Clean out the fridge and serve with leftover Brown Rice Stuffing or Maple Cider Holiday Salad
- 1lb of boneless skinless chicken thighs
- 1/4 cup of honey
- 1/3 cup of coconut aminos (or sub low sodium soy sauce if you aren’t gluten free)
- 1 T tomato paste
- 2 tsp coconut oil
- sea salt
- crushed red pepper
- rice flour (optional)
