This meal plan is coming out a little later than I wanted. We had a pretty good week here…I think we are finally getting into the groove of homeschooling, you know, just in time for it to be over in two weeks. We attended 6 birthday parades (is it me, or is everyone all of a sudden born in the spring?). And then just when we were getting ready to relax and enjoy our Friday pizza night, my daughter feel off her bike and broke her wrist pretty bad.
Like every mom in the world, I have been yelling for my kids to stop being rough, to slow down, that we do NOT want to go to the ER right now…and yet, there we were. 😬
So it hasn’t been the weekend we thought we were going to have over here, but my girl has been a trooper through it all. Tomorrow we go to the Ortho and we are hoping that it’s a clean break and we only need a cast.
Anyway, the meal plan is here and it’s ready with lots of delicious, springtime flavors. All five dinners and a breakfast are already loaded into a *NEW- 7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. (Don’t forget to make a copy of the spreadsheet – you won’t be able to access it any other way). If you aren’t following the meal plan exactly or can’t find certain ingredients in your store still, that’s ok. We are all just doing our best. Swap out what you need, and the containers will auto adjust!

Breakfast: Crustless Zucchini Quiche | Instant Pot Crustless Zucchini Quiche
21 Day Fix: 1/2 RED, 1/3 GREEN, 1/2 BLUE 1/2 tsp (per serving) | WW Blue: 5 points (per serving) | [Recipe makes 6 servings]
Groceries:
- 2 medium zucchini
- 1 onion
- 1 small container (15oz) of part skim ricotta
- 3 eggs
- 1 cup of shredded mozzarella
- 1 tablespoon of butter flavored olive oil, regular olive oil, butter, or ghee
- black pepper
- dried basil
- dried oregano
- olive oil cooking spray
Monday: 21 Day Fix Instant Pot Beanless Chili {Paleo|Whole 30 | 2B Mindset Friendly} [Stovetop option]
21 Day Fix : 1 RED, 1 3/4 GREEN, 1/2 tsp (per serving) | WW Blue: 7 points (per serving) | [Recipe makes 6 servings]
Groceries:
- 1.5 pounds ground beef (or sub ground chicken or ground turkey)
- 2 cloves garlic
- olive oil
- 1 large onion
- 1/2 cup celery
- 1 1/2 cups carrots
- 1 cup of bell peppers
- 2 cups of zucchini
- chili powder
- ground cumin
- dried oregano
- salt
- cayenne pepper
- 1 (15-ounce) can tomato puree or tomato sauce
- 2 small (10oz) cans of tomatoes with green chilies
Tuesday: Fish Tacos with Mango Salsa [Gluten Free | 21 Day Fix | WW]
21 Day Fix: 1 RED, 1 YELLOW, 1/4 PURPLE, 1/3 BLUE, trace GREEN (per serving) | WW Blue: 7 points (per serving) | [Recipe makes 4 servings]
Groceries:
- olive oil spray
- 1lb white fish – I use turbo, flounder, or mahi-mahi (you can sub shrimp)
- 8 corn tortillas (you can sub 4 flour tortillas instead – on the 21 day Fix, you can have 1 flour or TWO corn for a yellow.)
- salt free taco seasoning
- cilantro
- 3 limes
- 1 cup mango
- 2/3 cup avocado
- 1/4 red onion
- 1 tablespoon jalapeño
- 1/2 cup of plain Greek yogurt
- shredded lettuce or cabbage
- salt
Wednesday: Balsamic Chicken and Zucchini Skewers {21 Day Fix}
21 Day Fix: 1 RED, 1 GREEN, 1/3 BLUE, 2 tsp (per 2 skewers) | WW Blue: 6 points (per 2 skewers) | [Recipe makes 3 servings]

MARINADE
- balsamic vinegar
- olive oil
- fresh garlic
- honey
- dijon mustard
- dried oregano

OTHER INGREDIENTS
- 1 pound chicken breast
- 1/2 red onion
- 2 medium sized zucchini
- 1/3 cup of feta cheese
- wooden skewers, soaked in water to prevent burning
Thursday: Chicken Quinoa Mediterranean Salad with Tzatziki Dressing [21 Day Fix | WW]
21 Day Fix: 1 RED, 1 GREEN, 1/2 BLUE, 1/2 YELLOW, 1 ORANGE (per serving) | WW Blue: 7 points (per serving) | [Recipe makes 4 servings]
Groceries:
FOR THE SALAD
- 1 cup of cooked quinoa
- 2 cups spinach
- 1 cup cherry tomatoes
- 1 cup cucumber
- 2 T diced red onion (or more to taste)
- 1 lb diced grilled chicken (I seasoned mine with dried dill, lemon, salt and pepper)
- 2/3 cup feta cheese
- kalamata olives (10 per serving)
- chopped fresh mint
FOR THE DRESSING
- 1 cup plain Greek yogurt
- 1/2 cucumber
- 2 cloves garlic
- 1 lemon
- 1 tablespoon fresh dill
- Himalyan salt and freshly cracked black pepper
Friday: 21 Day Fix Turkey Quinoa Taco Bake
21 Day Fix: 1 GREEN, 1 RED, 1 YELLOW, 1 BLUE (per serving) | WW: Purple- 4 points; Blue- 7 points; Green- 9 points (per serving)| [Recipe makes 4 servings]
Note for FIXers: If you are using the suggested breakfast (quiche) you will need to adjust the amount of cheese and/or avocado in this recipe by half, so you do not go over your blue container for the day!
Groceries:
- 1 lb of lean ground turkey
- 2 1/2 cups of diced onion, tomato and peppers **you can use premade fresh salsa or 2 cans of Rotelle
- 1/2 cup of tomato sauce (use homemade or no sugar added to count as a GREEN!)
- 1 cup of shredded zucchini
- 2 cups of cooked quinoa
- 1 cup of shredded cheese
- 3 cloves of garlic
- 1/3 cup of avocado
- chili powder
- cumin
- fresh cilantro

I just want to say a HUGE thank you for posting these meal plans with grocery lists and all of the container counts. I honestly don’t think I would have been able to do the 21 day fix without these meal plans. I’m sure it takes a lot of time to create these posts. I’ve been searching on Pinterest to help me out and your blog has made it so incredibly easy for me. Thank you very much.
