Hey everyone…we are still home (obvi)…still managing life day by day here and so thankful for the sunshine today. And I’m totally gonna block out the fact that tomorrow and most of this week is going to be rainy – I am going to just live in the day. Hopefully you have some sunshine in your life this weekend!
The meal plans seem to be helping even during this crazy time, so we are back here with a new one – and I included the brand new recipe for Homemade Hamburger Helper which my family basically went crazy over. I hope you guys love it, too!
All five dinners and a breakfast are already loaded into a *NEW- 7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. If you aren’t following the meal plan exactly or can’t find certain ingredients in your store, that’s ok. We are all just doing our best. Swap out what you need, and the containers will auto adjust! (Don’t forget to make a copy of the spreadsheet – you won’t be able to access it any other way).

This week’s 21 Day Fix meal plan and WW Meal plan-
Breakfast: Gluten Free Make Ahead Freezer Waffles [2B Mindset | 21 Day Fix]
21 Day Fix: 1 YELLOW, 1 TSP, 1 sweetener TSP (per serving) | WW: Green- 7 points; Blue- 7 points; Purple- 3 points (per serving) | Recipe makes ~12 servings]
Groceries:
- 4 cups of Bob’s Red Mill Gluten Free Rolled Oats
- baking powder
- arrowroot flour
- raw sugar
- salt
- 3 eggs
- 2 cups of vanilla almond milk
- vanilla
- 4 T melted butter, vegan butter, or coconut oil (we love it with vegan butter best)
- coconut or avocado oil cooking spray
Monday: Healthy Instant Pot Meatloaf and Mashed Potatoes [21 Day Fix | Weight Watchers] [No instant pot? Try this oven recipe instead: Momma’s Meatloaf {21 Day Fix}]
21 Day Fix: 1 RED, 1 YELLOW, 1 GREEN, 1/4 BLUE, 2 TSP (per serving) | WW Blue: 11 points (per serving) | [Recipe makes 6 servings]
Groceries:
- 1 1/2lbs of lean, grass fed ground beef
- 1/4 cup seasoned breadcrumbs (we use gluten free)
- 1/4 onion
- 7 cloves of garlic
- 1 egg
- 1/2 cup of shredded pecorino romano, plus more for topping (Locatelli brand is the best)
- dry or fresh parsley
- 1 (8 oz) can tomato sauce
- 3 cups golden potatoes
- 3 cups of baby carrots
- 3 T vegan butter or ghee
- 1 cup of chicken broth or stock
- salt, pepper
Tuesday: Hidden Cauliflower Taco Meat (21 Day Fix Friendly/Instant Pot Friendly) Tacos
21 Day Fix: 1 RED, 1 GREEN, plus taco shells and toppings (per serving) | WW Blue: 0 points – 99% ground turkey; 5 points – 93% ground beef; plus taco shells and toppings (per serving) | [Recipe makes 4 servings]

- 1lb of ground meat of your choice (we using love lean ground beef)
- 3 cups of cauliflower rice (can be frozen)
- 1 cup of low sodium tomato sauce
- salt free taco seasoning

- Your favorite taco toppings
- Corn or flour tortillas
Wednesday: 21 Day Fix Easy Lemon Chicken with Freezer Friendly Instant Pot Brown Rice and green beans
Chicken – 21 Day Fix: 1 RED, 1/4 YELLOW, 2 TSP (per serving) | WW Blue: 5 points (per serving) | [Recipe makes 4 servings]
Rice – 21 Day Fix: 1 YELLOW (per serving) | WW Blue: 2 points (per serving) | [Recipe makes many servings]
Tip for FIXers: If following the suggested breakfast on this plan, Bracket A users will need to adjust the amount of rice you have at dinner tonight, to not go over on your yellows for the day!

Chicken
- 1 lb boneless chicken breasts – I like them on the thinner side
- 1 Tbs plus 2 tsp of clarified or vegan butter
- olive oil
- garlic powder
- salt and pepper
- 1/2 cup of rice flour (or sub whatever flour you have on hand)
- 3 lemons
- 1/2 cup low sodium chicken broth
- fresh parsley (optional)
Rice
- cooking oil spray
- equal parts brown rice and water
Thursday: *NEW* Homemade Hamburger Helper

- garlic powder
- dry mustard
- Himalayan salt
- 2 1/4 cups chicken broth or beef broth
- 4 cups of cauliflower florets – small head or frozen bag
- 2 cups of freshly shredded cheddar cheese (About 1 block)
- 2 T pecorino romano (optional)
Friday: 21 Day Fix Chicken Satay with Creamy Peanut Sauce with 21 Day Fix Cauliflower Rice with Lime and Cilantro

- 2/3 cup of low sodium chicken broth
- 4 T of creamy peanut butter
Cauliflower Rice
- 4 cups Cauliflower (about 1 head)

- 1–2 cloves of garlic
- cilantro
- 1 lime
