I have mild obsession with caprese chicken…especially in the summer months because why are grocery store tomatoes the worst? Gimme all the garden and farm fresh tomatoes!
And that is why this is one of three caprese chicken recipes on this blog. I have my Instant Pot Caprese Chicken and my Easy Grilled Caprese Chicken.
Not to be confused with this One Skillet Caprese Chicken.
Who doesn’t love a one skillet recipe, right? And once I saw a similar recipe on Delish.com, and I had to make a healthier version. I made a few simple modifications, decreasing the oil and adding red onion, and I served mine over spaghetti squash. but wow was it good.
My healthier caprese chicken is only 3 WW Points for a HUGE serving and 1.5 green, 1 red, 1/2 blue, and 1/2 tsp for the 21 Day Fix.
What do I need to make this Caprese Chicken recipe?
- Extra-virgin olive oil – you only need a little bit! You can also use avocado oil
- Olive oil cooking spray – by adding some cooking spray, we could reduce the amount of oil and teaspoons for the 21 Day Fix
- Boneless skinless chicken breasts – you can also use boneless chicken thighs or even boneless chicken tenderloins.
- Balsamic vinegar – just the vinegar, not the dressing. Look for a good quality, organic vinegar
- Garlic – feel free to add more if you are a garlic lover!
- Grape tomatoes – you can sub cherry or whatever fresh and yummy tomatoes you have on hand
- Red onion – I prefer red in this dish, but you can sub for a different kind of onion if you don’t have red on hand. It will still be delish.
- Fresh basil – If you don’t have any fresh, you can sub dried, but honestly the fresh basil makes this dish!
- Shredded mozzarella cheese – freshly shredded is best
- Spaghetti squash – optional, but I love this dish over spaghetti squash
How to Make One Skillet Caprese Chicken
- Add you seasoned chicken to a large skillet or cast iron pan cook over medium heat until golden and cooked through, about 6 minutes per side. Transfer cooked chicken to a plate.
- Reduce heat to medium low and add the two teaspoons of olive oil to the pan. Add onion and stir for a few minutes or until they begin soften. Next, add garlic and stir for one minute or until fragrant.
- Add those deliciously fresh tomatoes and balsamic vinegar. Sprinkle with salt and let simmer until soft, about 4-5 minutes.
- Stir in a tablespoon of fresh basil. Return chicken to skillet and nestle in tomatoes. Top evenly with mozzarella and cover with lid to melt cheese.
- Spoon tomatoes and chicken and sauce over spaghetti squash, noodles, or rice and garnish with remaining basil. Yum!
How do I prep my spaghetti squash?
There are so many different ways to cook spaghetti squash! It depends on what mood you are in and how much time you have. Some nights the microwave is the easiest for me, and others I use my Instant Pot. If I’m really on top of things and know we will be around the house, I cook it low and slow in the oven. One Skillet Caprese Chicken
Ingredients
- 2 teaspoons olive oil
- Olive oil cooking spray
- 1 lb. boneless skinless chicken breasts
- Himalayan or sea salt
- Black pepper
- 1/4 cup balsamic vinegar
- 2 cloves garlic minced
- 8 oz grape tomatoes halved
- 1/4 red onion diced
- 2 tablespoons chopped fresh basil
- 2/3 cup shredded mozzarella cheese
- 4 cups cooked spaghetti squash optional
Instructions

I love this recipe! in the summer, I turned it into pizza. I spread the tomato mixture on a crust/dough, chopped up the chicken and spread it around, and topped it with the cheese. so good!

This was so good!!!! Only thing I did was add a little water to the pan to deglaze it For the onions and garlic. My kids wanted more. This is my first week on clean eating and so glad I found this one. I will be making more of your recipes in the near future.
