Confession: I am totally conflicted about my kids going back to school.
On one hand I LOVE the relaxed days of summer and all that comes with those days. But on the other hand…I am missing having a routine. There is something comforting in the routine of school days, and when weekends look different than weekdays. #amItheonlyone
While we still have a couple weeks left here before school officially starts, I know many of you have kids that started back already or will start school next week.
So for you, I have something to ease the pain of summer’s end and get your meal planning and prepping underway as the chaos begins again.
I gathered my favorite Back to School breakfasts, lunches, dinners, and snacks/desserts- 5 of each- with some ideas and tips to help you be successful this year! Don’t worry, friends- we’ve got this!
Breakfast
- 21 Day Fix Overnight Oats | How to Make Overnight Oats – Overnight oats make life SOO much easier! These don’t have yogurt (usually the culprit if you don’t love overnight oats) and are totally versatile. Use whatever toppings/fruit you have on hand.
- 21 Day Fix Baked Oatmeal Cups – Everyone can choose their favorite toppings on these and they are FREEZER friendly so I suggest making a double batch! Total winner!
- 21 Day Fix Mason Jar Egg Casseroles – Portable, protein and veggie packed, and ready to heat for those extra crazy mornings!
- Mini French Toast Casserole Cups {21 Day Fix} – Makes Monday feel like a treat with all that cinnamon-y goodness! (pictured above)
- Cheesy Bacon Breakfast Bites {21 Day Fix} – I love to make a batch of these egg cups and reheat them all week. You can swap out the bacon for sausage or even skip the cheese if you want- they are delicious no matter what.
Lunch
- Instant Pot Chicken Tortilla Soup {21 Day Fix} or Crock Pot Chicken Tortilla Soup {21 Day Fix} – I love this “dump and go” soup- so easy! But even better? Once it’s cooled, pack it up in mason jars for grab and go lunches!
- Sloppy Joe Stuffed Sweet Potatoes {21 Day Fix} – I like to prep this one ahead because it reheats really nicely for lunch all week!
- 21 Day Fix Salsa Lime Chicken (Instant Pot/Slow Cooker) – Perfect for lunch because it is so versatile! Use in bowls, over greens, make taquitos, or scoop up with some chips or veggies! (pictured above)
- Fall Harvest Mason Jar Salads with Maple Cider Vinaigrette (21 Day Fix) – I love layered salads for packed lunches. Everything stays so fresh and yummy- and this dressing is amazing!
- Hidden Cauliflower Taco Meat (21 Day Fix Friendly/Instant Pot Friendly) – Another quick (veggie packed) versatile protein to use in bowls, as a salad, or tacos!
Dinner
- Italian Chicken Skillet {21 Day Fix} – I like to pair this crazy fast and super yummy dinner with some GF pasta and roasted broccoli. Huge crowd pleaser!
- Spice Rubbed Instant Pot Whole Chicken | Spice Rubbed Crock Pot Whole Chicken [21 Day Fix | Weight Watchers | Ultimate Portion Fix] – This whole chicken is so easy in the Instant Pot and there are even directions on how to cook from frozen! (pictured above) I like to serve it with Easy Gluten-free Mediterranean Chickpea Salad when it’s warm out, and 21 Day Fix Mashed Cauliflower when it’s cold out. (pictured above)
- Instant Pot Cauliflower Cheeseburger “Mac” or 21 Day Fix Cauliflower Cheeseburger “Mac” – A go-to recipe when we want a low carb comfort food. This will do the trick!
- 21 Day Fix Instant Pot Beanless Beef Chili {Paleo/Whole 30 Friendly} – No beans but plenty of yum. You won’t even miss them!
- Healthy Chicken Ramen Noodle Stir Fry [Gluten-free | 21 Day Fix | Weight Watchers] – Kids love this one! And really, can you go wrong with ramen noodles?!
Snacks/Dessert
