We had a beautiful start to the week here in PA, but now it’s cold, rainy, and the beautiful Fall leaves are pretty much gone. I know it happens every year, but man, I would love to have kept those 70 degree and sunny days a little longer this year. And don’t even get me started on daylight savings. Anybody else ready to skip that tradition?
With this weather, it’s definitely time for some cozy dinners and some more Thanksgiving sides to “audition” for the big day. I asked my Instagram followers about holiday plans this year, and it sounds like many of you will just be home with your immediate family, but the celebrations will continue nonetheless. Definitely keep your eyes peeled for some NEW Thanksgiving | Holiday recipes coming your way this week with some made over Turkey Day classics!
Oh – and speaking of cozy, have you seen my *NEW* Butternut Squash Mac and Cheese? It’s to-die-for delish and will be appearing on a meal plan soon! But if you can’t wait, you can totally make it this week! (It would be a perfect sub for Tuesday’s casserole, if that one’s not your jam!)

Breakfast: Instant Pot Frittata
21 Day Fix: 1 GREEN, 1 RED, 1/4 BLUE (per muffin) | WW: Green- 6 points; Blue- 3 points; Purple- 3 points (per serving) | [Recipe makes 4 servings]
Groceries:
- olive oil cooking spray
- ½ cup feta cheese (can sub favorite cheese)
- 3 1/2 cups fresh baby spinach (can sub kale or other leafy veggie)
- ½ cup diced onion
- 6 eggs
- ¼ cup original almond milk (can sub any milk you have on hand)
- 4 slices turkey bacon (can sub pork bacon)
- salt
Monday: Grilled or Air Fryer Steak with Healthy Sweet Potato Casserole
Steak – 21 Day Fix: 1 RED, 1 TSP (per 1/2 c. serving) | WW Blue: 5 points (per 8 oz steak) | [Recipe makes 2 steaks]
Casserole – 21 Day Fix: 1 GREEN, 1 YELLOW, 1/4 BLUE, 2 TSP (per serving) | WW Blue: 9 points (per serving) | [Recipe makes 6 servings]

- 2 Strip Steaks (about 8 oz and at least 1. 5 inches thick) You can also use Ribeye or Filet Mignon

Casserole
- 3 sweet potatoes
- 6 cups butternut squash (about 1 squash or use frozen)
- 2 T melted coconut oil or butter
- sea salt + black pepper
- ground cinnamon
- maple syrup
- vegan butter (or you can use more coconut oil instead)
- 1/2 cup pecans (you can increase this to 1 cup if you want)

Tuesday: Sheet Pan Nachos
