As I talk to friends and family, and hear from readers, it seems like some activities are returning to our lives. Activities like vacations, sports, and camp. No matter where you stand on your comfort level with resuming activities, I think there is one universal truth: it has been a slow adjustment.
The speed that our lives moved just a few months ago, seems so strange now. And we won’t mention the amount of times I’ve left the house lately and forgotten my wallet!
That’s why this week’s meal plan is filled with some easy and delicious choices. Using plenty of zucchini, you can also find some recipes for your backyard bounty! All five dinners and a breakfast are already loaded into a *7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. (Don’t forget to make a copy of the spreadsheet – you won’t be able to access it any other way). If you aren’t following the meal plan exactly or can’t find certain ingredients, that’s ok. Swap out what you need, and the containers will auto adjust!

Breakfast: 21 Day Fix Sausage and Zucchini Quiche {Dairy-free and Gluten-free}
21 Day Fix: 1 RED, 1/2 GREEN, 1/4 BLUE, 1/2 TSP (per serving) | [Recipe makes 8 servings]
Tip for FIXers: If following this week’s meal plan as written, you can sub almond milk for coconut milk in order not to go over your allotted BLUE container due to some of the dinners!
Groceries:
- cooking spray
- 8 large eggs
- 1 lb all natural poultry breakfast sausage – you can also make your own
- 4 cups of zucchini
- 1/2 red onion
- 2/3 cup of full fat coconut milk
- 1/2 cup of grape tomatoes
- fresh basil
- 4 tsp vegan butter (or sub a good olive oil or ghee)
- sprinkle of salt and pepper
Monday: Spice Rubbed Whole Chicken [Instant Pot | Crock Pot] with 21 Day Fix Three Cheese Zucchini Bake
Chicken – 21 Day Fix : 1 RED (per serving) | WW Blue: 0 (white meat) or 1 (dark meat) points (per serving) | [Recipe makes 6+ servings]
Zucchini – 21 Day Fix : 1 GREEN, 1 BLUE (per serving) | WW Blue: 4 points (per serving) | [Recipe makes 4 servings]

Chicken
- 1 Whole Chicken – 4 to 5 lbs for a 6 quart Instant Pot and 5-7 lbs for an 8 quart Instant Pot or Crock Pot
- 1 onion
- 1 lemon
- paprika
- cayenne
- onion powder
- thyme
- garlic powder
- salt
- 1 cup chicken broth or water (for IP)
Zucchini
- olive oil spray
- 4 cups of zucchini
- 4 T fresh basil
- Italian seasoning
- garlic powder
- 2/3 cup of shredded mozzarella cheese
- 1/3 cup shredded Parmesan or Romano cheese
- 1/3 cup of feta cheese
- salt and fresh ground black pepper to taste
- dash of crushed red pepper (optional)
Tuesday: Cheesy Zucchini Taco Skillet {21 Day Fix}
21 Day Fix: 1 GREEN, 1 RED, 1/2 BLUE plus toppings (per serving) | WW Blue: 5 points plus toppings (per serving) | [Recipe makes 4 servings]

- olive oil cooking spray
- 1 1/2 pounds of extra lean, grass-fed ground sirloin
- 1/2 onion
- 1 bell pepper
- 2 cups zucchini
- chili powder or salt free taco seasoning
- 1 (14.5 oz) can of diced tomatoes or (10oz) can diced tomatoes with green chilis
- sprinkle of salt and pepper
- 2/3 cup shredded cheddar or Monterey Jack cheese
- taco toppings – avocado, cilantro, extra cheese, anything goes!
Wednesday: Homemade Hamburger Helper

- 2 cups of gluten free elbows

- 2 T pecorino romano (optional)

- 1–2 cloves of garlic
