A yummy 21 Day Fix Meal Plan, complete with cozy favorites like Meatloaf with Instant Pot Mashed potatoes and Chicken Tortilla Soup, that are easy to pull together on a weeknight! This is it. Less than two week until Thanksgiving. I can’t wait. I love this holiday!
Do you have your menu planned yet? I am still finalizing, but I have a pretty good idea of all the yummy dishes I’ll be making.
If you aren’t totally set yet, I hope you’ll try some favorites on this meal plan that would make perfect Thanksgiving additions.
First, mashed potatoes made in the Instant Pot are tough to top. If you have made Healthy Instant Pot Meatloaf and Mashed Potatoes, then you know how good they are. But, I finally gave those beautiful Instant Pot Mashed Potatoes their own post, and some time in the spotlight. Yay!
And second, I included Cauliflower Au Gratin as Wednesday’s side dish but seriously debated including Instant Pot Loaded Cauliflower Mash too. It was a tough call, so feel free to switch it up if Loaded Cauli mash is more your style.

This week’s 21 Day Fix meal plan-
Monday: Healthy Instant Pot Meatloaf and Mashed Potatoes [21 Day Fix | Weight Watchers]

21 Day Fix: 1 RED, 1 YELLOW, 1 GREEN, 1/4 BLUE, 2 TSP (per serving) | WW Freestyle: 11 points (per serving) | [Recipe makes 6 servings]
- 1 1/2 lb of lean, grass fed ground beef
- 1/4 cup seasoned breadcrumbs (we use gluten free)
- 1/4 onion
- 7 cloves of garlic
- 1 egg
- 1/2 cup of shredded pecorino romano, plus more for topping (Locatelli brand is the best)
- 1 tsp of dry parsley or 1 T freshly chopped parsley
- 8 oz can tomato sauce
- 3 cups of quartered and peeled golden potatoes
- 3 cups of baby carrots
- 3 T vegan butter or ghee
- 1 cup of chicken broth or stock
- salt, pepper
Tuesday: Instant Pot Chicken Tortilla Soup
21 Day Fix: 1/2 RED, 1/2 GREEN, 1/2 YELLOW, with tortilla topping, no other toppings (per serving) | WW Freestyle: 1 point with tortilla topping, no other toppings (per serving) | [Recipe makes 6 servings]
Groceries:
- 1 1/4 lb raw boneless skinless chicken breasts (about 3–4 Breasts)
- 10 oz. can diced tomatoes with green chilies
- 14.5 oz. can diced tomatoes (no salt added)
- 1 cup frozen corn
- 1 cup black beans (no salt added)
- 1 medium onion
- 1 jalapeno
- 2 cloves garlic
- 4 cups of organic, low sodium chicken broth or stock
- ground cumin
- chili powder
- Himalayan salt
- black pepper
- package of corn tortillas
- olive oil cooking spray
- Himalayan salt
- Optional toppings – avocado, cheese, lime, Greek yogurt, cilantro
Wednesday: 21 Day Fix Instant Pot Maple BBQ Chicken (Slow Cooker Option) with Cauliflower Au Gratin [21 Day Fix | Keto Friendly | Gluten Free | WW ]
Chicken- 21 Day Fix: 1 RED, 1 TSP (per serving) | WW Freestyle: 8 (chicken thighs) or 5 (chicken breasts) points (per serving) | [Recipe makes 4 servings]
Cauliflower- 21 Day Fix: 1 GREEN, 1 BLUE, 1 TSP (per serving) | WW Freestyle: 5 points (per serving) | [Recipe makes 4 large servings]
Groceries:
Chicken
- 1 to 1.5 pounds of boneless, skinless chicken thighs
- 1/2 cup tomato paste
- 1/4 cup of coconut aminos (or sub low sodium soy sauce if not gluten-free)
- 3 Tbsp pure maple syrup
- 2 Tbsp apple cider vinegar
- garlic powder
- onion powder
- sprinkle of sea or Himalayan salt and black pepper
- optional – thickener of your choice (arrowroot, tapioca, cornstarch, etc)
Cauliflower
- 1 small to medium head of cauliflower (about 4 cups)
- 4 tsp of gluten free flour or whole wheat flour (or sub almond flour for keto)
- 4 tsp vegan butter, butter, or ghee
- 1 cup of unsweetened original almond milk
- 1 1/4 cups shredded extra sharp cheddar cheese (use Daiya for dairy free!)
- 2T of Pecorino Romano Cheese
- garlic powder (optional- leave out or sub with 2 cloves of fresh garlic)
- Himalayan salt
- 3T gluten free panko
Thursday: Instant Pot Sausage Broccoli Pasta (21 Day Fix)
21 Day Fix: 1 RED, 1/2 to 1 GREEN (see blog post), 1 YELLOW, 1/2 BLUE, 1/2 TSP (per serving) | WW Freestyle: 7 without cheese, 9 with cheese (per serving) | [Recipe makes 4 servings]
- olive oil
- 1 lb spicy or sweet Italian poultry sausage,
- 1/2 onion
- 4 cloves of garlic
- 1 1/2 cups of uncooked gluten free pasta
- 2–4 cups of fresh broccoli florets
- 2 cups of low sodium chicken broth or stock
- crushed red pepper
- 2/3 cup Parmesan cheese
Friday: 21 Day Fix One Skillet Burrito Bowl
21 Day Fix: 1 RED, 1 GREEN, 1 YELLOW, 1/2 BLUE (per serving) | WW Freestyle: 4 points (per serving) | [Recipe makes 4 servings]

- 2 bell peppers
- 1lb lean ground meat (I used ground turkey)
- 1 (14.5oz) can of diced tomatoes
- 1/2 cup of quick cook brown rice (I LOVE Aldi organic)
- 1 cup of organic low sodium chicken stock or broth
- 1/4 cup of black beans
- 1/4 cup of corn
- garlic powder
- chili powder
- cumin
- 2/3 cup of shredded cheddar cheese
- fresh cilantro
- chopped green onion
