Hey guys!

On this week’s meal plan there is a newly updated recipe – Taco Casserole [Crock Pot | Instant Pot].  If you have never tried it, you need to!  It began as a crock pot recipe, but has since been updated with Instant Pot directions, too.  Now with new pictures, and some helpful tips, it’s perfect for a summer meal plan because once you brown the meat, you can dump the rest of the ingredients in and get back to whatever fun you were having!  

The rest of the meals this week are pretty simple too- and light for summer!  It’s been a while since 21 Day Fix Greek Spaghetti Squash Boats {Gluten-free} have been on a meal plan and Instant Pot Chicken Tortilla Soup {21 Day Fix} is always a hit! Hope you enjoy the week!

All five dinners and a breakfast are already loaded into a *7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. (Don’t forget to make a copy of the spreadsheet – you won’t be able to access it any other way).  If you aren’t following the meal plan exactly or can’t find certain ingredients, that’s ok. Swap out what you need, and the containers will auto adjust!

This week’s 21 Day Fix meal plan and WW Meal plan- 

Breakfast: Garden Vegetable Frittata {21 Day Fix}

21 Day Fix: 1/2 GREEN, 1/2 BLUE, 1 RED  (per serving) | WW Blue: 3 points (per serving) | [Recipe makes 4 servings- need to 1.5 or double]

Groceries: 

  • 2 tsp olive oil
  • 1/2 onion
  • 1 cup zucchini
  • 1 cup cherry or grape tomatoes
  • 1 T fresh basil
  • 4 large eggs
  • 4 large egg whites
  • 2/3 cup Parmesean cheese blend, shaved or shredded
  • Sprinkle of salt and fresh pepper

Monday: 21 Day Fix Greek Spaghetti Squash Boats {Gluten-free}

21 Day Fix : 1 1/2 GREEN, 1/2 RED, 1/2 BLUE, 1/2 ORANGE (per serving) |  WW Blue: 3 points (per serving) | [Recipe makes 4 servings]

Groceries: 

  • 1 medium spaghetti squash
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes
  • 1 cucumber
  • 2 T red onions
  • 20 black olives
  • 1 1/3 cups of diced grilled chicken (about 3 breasts)
  • 2/3 cup of feta cheese
  • 1 cup plain Greek yogurt
  • 2 cloves garlic
  • 1 lemon
  • 1 tablespoon fresh dill
  • Himalayan salt and freshly cracked black pepper

Tuesday: Instant Pot Chicken Tortilla Soup {21 Day Fix} (No Instant Pot?  Try this- Crock Pot Chicken Tortilla Soup {21 Day Fix})

21 Day Fix:  1/2 RED 1/2 GREEN 1 YELLOW plus toppings (per serving) | WW Blue: 1 point plus toppings (per serving) | [Recipe makes 6 servings]

Groceries:

  • 1 1/4 lb raw boneless skinless chicken breasts (about 3–4 Breasts)
  • 10 oz. diced tomatoes with green chilies
  • 14.5 oz. diced tomatoes (no salt added)
  • 1 cup frozen corn
  • 1 cup black beans (no salt added)
  • 1 medium onion
  • 1 jalapeno
  • 2 cloves garlic
  • 4 cups of organic, low sodium chicken broth or stock
  • ground cumin
  • chili powder
  • Himalayan salt
  • black pepper
  • 4 organic corn tortillas
  • olive oil cooking spray
  • Himalayan salt
  • Optional toppings – avocado, cheese, lime, Greek yogurt, cilantro

Wednesday: Balsamic Chicken and Zucchini Skewers {21 Day Fix}

21 Day Fix: 1 RED, 1 GREEN, 1/3 BLUE, 2 TSP (per serving) |  WW Blue: 6 points (per serving) | [Recipe makes 3 servings]

Tip: Serve this with Freezer Friendly Instant Pot Quinoa, Freezer Friendly Instant Pot Brown Rice, or pasta

Groceries:

  • ¼ cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 teaspoon minced garlic
  • 2 teaspoons of honey
  • 1 teaspoon dijon mustard
  • oregano
  • garlic powder
  • onion powder
  • salt
  • 1 pound chicken breast
  • 1/2 red onion
  • 2 medium sized zucchini
  • 1/3 cup of feta cheese
  • wooden skewers

Thursday: *Updated* Taco Casserole [Crock Pot | Instant Pot]

21 Day Fix: 3/4 GREEN, 1 YELLOW, 1 RED, 1/2 BLUE (per serving) | WW Blue: 2 points (per serving) | [Recipe makes 4 servings]

Groceries: 

  • 1 lb organic ground turkey or chicken
  • 2 cups of bell peppers
  • 1/2 cup of black beans
  • 1/2 cup of corn
  • 1/2 of a red onion
  • 1 garlic clove
  • 1 can of tomatoes and green chilies
  • 1/2 cup uncooked quinoa
  • 1–2 T Salt Free Taco Seasoning (or sub 1 Tbsp chili powder and 1 tsp cumin)
  • organic chicken broth (1 cup for crock pot; 1/2 cup for Instant Pot)
  • 2/3 cup of shredded cheddar cheese or Mexican blend
  • sprinkle of salt and pepper
  • fresh lime to taste
  • (optional) lettuce wraps or corn tortillas

Friday:  21 Day Fix Simple Stir Fry with Chicken and Veggies 

21 Day Fix: 1 RED, 1 GREEN, 1/4 TSP (per serving)  | WW Blue: 1 point (per serving) | [Recipe makes 4 servings]

Tip: Had enough chicken this week?  This is really yummy with shrimp too! Also, serve with Freezer Friendly Instant Pot Quinoa or Freezer Friendly Instant Pot Brown Rice

Groceries:

  • 4 cups of veggies of your choice
  • 1 lb Boneless chicken breast (or sub shrimp)
  • 3 cloves of garlic
  • Fresh lemon
  • 3 T coconut aminos
  • 1/2 cup chicken broth
  • 1 tsp freshly grated ginger
  • 1 tsp coconut oil
  • cooking spray
