Hey there! Happy Friday! Although my kiddos only had school three days this week, they were three full days… in a row and I am finally feeling like I am getting into a routine again.
Isn’t that the best feeling? Maybe it’s just me, but man I feel like I can accomplish all the things when we have a routine in place.
And our little pup is also getting into a bit of a routine, too. She is sleeping much better and even tolerating her crate much better! I know her patterns a bit more and I am able to use her long morning nap to get a lot done. Thank you again if you reached out during those first few crazy weeks when we first got her – as new puppy owners, that support was much needed and SO appreciated!
Ok – onto the meal plan. This is a great weekend to hit up the farm stand for eggplant, corn, tomatoes, and the last of that summer squash/zucchini and this recipe makes great use of it all! I will be moving over to all thing fall very soon, but there is a still a lot of summer produce to enjoy right now! Capitalize on it, friends!
All five dinners and a breakfast are already loaded into a *7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. If you aren’t following the meal plan exactly or can’t find certain ingredients, that’s ok. Swap out what you need, and the containers will auto adjust!
If you are looking for a lunch option, make extra of that Eggplant and enjoyyyyyyyyy. It’s legit my fave. If you are following the fix and running into an issue with the blue container, you can make a tray if this with very little cheese and I swear it’s still to die for.
