Hey there! Happy Friday! Although my kiddos only had school three days this week, they were three full days… in a row and I am finally feeling like I am getting into a routine again.
Isn’t that the best feeling? Maybe it’s just me, but man I feel like I can accomplish all the things when we have a routine in place.
And our little pup is also getting into a bit of a routine, too. She is sleeping much better and even tolerating her crate much better! I know her patterns a bit more and I am able to use her long morning nap to get a lot done. Thank you again if you reached out during those first few crazy weeks when we first got her – as new puppy owners, that support was much needed and SO appreciated!
Ok – onto the meal plan. This is a great weekend to hit up the farm stand for eggplant, corn, tomatoes, and the last of that summer squash/zucchini and this recipe makes great use of it all! I will be moving over to all thing fall very soon, but there is a still a lot of summer produce to enjoy right now! Capitalize on it, friends!
All five dinners and a breakfast are already loaded into a *7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. If you aren’t following the meal plan exactly or can’t find certain ingredients, that’s ok. Swap out what you need, and the containers will auto adjust!
If you are looking for a lunch option, make extra of that Eggplant and enjoyyyyyyyyy. It’s legit my fave. If you are following the fix and running into an issue with the blue container, you can make a tray if this with very little cheese and I swear it’s still to die for.

THIS WEEK’S 21 DAY FIX MEAL PLAN AND WW MEAL PLAN-
Meal Plan & Grocery List {Week of 9/13/21}
Breakfast: Greek yogurt with fruit and 21 Day Fix Granola
21 Day Fix: 1/2 YELLOW, 1/2 BLUE,1/8-1/4 ORANGE, 1/2 TSP, 1 sweetener TSP (per serving) | [Recipe makes 4 servings - but we are making a double batch!]
Tip for FIXers: Monday and Tuesday's dinners are a full blue so you may need to make adjustments and make it work for you. You could keep the almonds separate from the rest of the granola and add 2 1/2 Tbsp almonds to your granola portion on Wed, Thurs, and Fri. Or you can follow the granola recipe as written and just skip the granola completely on Mon and Tues. You can always use half the amount of cheese in the Eggplant and Enchilada skillet and they will still be super yummy! You have lots of options to make it work!
Groceries:Granola Double batch:
- 1 1/2 cups of old fashioned oats
- 1/2 cup of brown rice cereal
- 1 1/3 cup slivered almonds
- 2–4 tbsp seeds – Chia, hemp, flax, pumpkin, sunflower are all great options
- 4 tsp honey
- 4 tsp pure maple syrup
- 4 tsp warm coconut oil
- 1 tsp cinnamon
- (optional add in) dried cranberries
- Greek yogurt
- your favorite fruit (berries work great!)
Monday: Baked Eggplant Parmesan
21 Day Fix: 2 GREEN, 1 BLUE (per serving) | WW: Green, Blue, & Purple – 6 points (per serving) | [Recipe makes 6 servings]
Groceries:- 3 pounds of eggplant (I like smaller ones because the big ones tend to have a lot of seeds)
- 2 ⅓ c Jarred Tomato sauce or homemade tomato sauce
- Olive oil cooking spray or 2 tsp olive oil
- 1 2/3 cups Mozzarella cheese
- 1/3 cup Parmesan cheese
- Salt
Tuesday: Lazy Zucchini Enchilada Skillet
21 Day Fix: 1 1/4 RED, 1 BLUE, 1 GREEN, 1/2 TSP (per serving) | WW Freestyle: 7 points (per serving) | [Recipe makes 4 servings]
Groceries:- 1 small can of tomato sauce (8oz)
- dried oregano
- ground cumin
- garlic powder
- onion powder
- chili powder
- olive oil
- olive oil cooking spray
- 1 lb lean ground turkey, chicken, or beef
- 1/4 diced red onion
- 3 cups of zucchini
- 2 cloves of garlic
- 1 cup of cottage cheese (I use the 2% one)
- 3 T of plain Greek yogurt
- 1 1/3 cup of shredded sharp cheddar
- salt and pepper
- cilantro
Wednesday: Italian Pork Chops
21 Day Fix: 1 RED, 1/2 GREEN, trace BLUE, 1 TSP (per serving) | WW: Green, Blue, Purple – 6 points (per serving) | [Recipe makes 4 servings]
Groceries:- 4 Boneless Pork Chops
- olive oil
- 1/2 pint of cherry or grape tomatoes
- 1/2 diced onion
- 2 cloves garlic
- dried basil
- dried oregano
- sea salt
- sprinkle of Parmesan cheese
Wednesday Side: *NEW* Instant Pot Corn on the Cob
21 Day Fix: 1 YELLOW (per serving) | WW: Green – 3 points, Blue – 0 points, Purple – 0 points (per serving) | [Recipe makes 4 servings]
Groceries:Thursday: Krispie Baked Chicken
21 Day Fix: 1 RED, 1 YELLOW (per serving) | WW Freestyle: 2 points (per serving) | [Recipe makes 4 servings]
Groceries:- 1lb chicken tenderloins
- 2 eggs
- 2 cups of brown rice cereal (can sub GF or whole wheat panko)
- Himalayan salt
- garlic powder
- sprinkle of pepper
- olive oil cooking spray
Thursday side: Instant Pot Loaded Cauliflower Mash
21 Day Fix: 1 GREEN, 1/2 RED, 1/2 BLUE, 1 TSP (per serving) | WW Freestyle: 5 points (per serving) | [Recipe makes 4 servings]
Groceries:- 8 slices of turkey bacon
- 1 head of cauliflower
- 2 Tbsp Parmesan cheese
- 4 tsp butter
- salt
- fresh chives
- ⅔ cup of shredded cheddar cheese
- 1 cup water or broth
Friday: Mini Zucchini Pizzas
21 Day Fix: 1 GREEN, 1/2 BLUE (per serving) | WW Freestyle: 3 points (per serving) | [Recipe makes 1 serving]
Note: Recipe makes 1 serving so you will need to adjust according to your cooking needs!
Groceries:- 1/3 cup of homemade tomato sauce
- 1/2 zucchini
- 2 1/2 Tbsp shaved Parmesan OR shredded mozzarella
